- 1 frenched Finnsheep rack of lamb (about 1½ lbs)
- 1 tbsp ghee
- 2 tsp kosher salt
- 1 tsp coarse black pepper
DIRECTIONS
1. Heat the oven to 400°F. Rub the rack with ghee, salt, and pepper — nothing else. Good lamb doesn't need hiding.
2. Set it bones-down in a small roasting pan and roast 22–28 minutes, until the center reads 125–130°F for rosy pink.
3. Rest 10 minutes, then slice between the bones into chops. Two to three chops per person.
Dijon and Herb-Crusted Rack

INGREDIENTS
- 1 frenched Finnsheep rack of lamb
- 2 tbsp Dijon mustard
- ½ cup fresh breadcrumbs
- 2 tbsp chopped parsley and rosemary
- 1 garlic clove, grated
- 1 tbsp ghee, salt and pepper
DIRECTIONS
1. Season the rack with salt and pepper and sear the fat side in a hot oven-safe skillet for 3–4 minutes until golden.
2. Brush the meaty side with Dijon. Mix breadcrumbs, herbs, garlic, and ghee, and press onto the mustard.
3. Roast at 400°F for 18–22 minutes, until the center reads 125–130°F.
4. Rest 10 minutes under foil, then carve into chops. The crust keeps the eye of the meat incredibly juicy.
Crown Roast of Two Racks

INGREDIENTS
- 2 frenched Finnsheep racks of lamb
- Butcher's twine
- 2 tbsp ghee, salt, pepper
- 4 garlic cloves and a handful of rosemary for the center
- Root vegetables or a rice pilaf to fill the crown (optional)
DIRECTIONS
1. Stand the racks upright, fat sides out, and bend them into a circle, bones pointing up like a crown. Tie firmly at the base and middle with twine.
2. Season inside and out. Tuck garlic and rosemary into the center, and fill with par-cooked vegetables if you like.
3. Roast at 375°F for 40–50 minutes, checking the thickest chop for 125–130°F.
4. Rest 15 minutes before carrying it to the table whole — it's the single most dramatic presentation in lamb cookery. Snip the twine at the table and carve down between the bones.
