Cooking Finnsheep Boneless Leg of Lamb

Boneless leg cooks faster and carves cleaner than bone-in. Tied into a roast it's weeknight-friendly; opened flat it's the best lamb cut for the grill.

Simple Herb-Rubbed Boneless Roast

Serves: 6–8 Prep time: 10 minutes Cook time: about 75 minutes at 350°F INGREDIENTS - 1 boneless tied Finnsheep leg roast (3–4 lbs) - 2 tbsp ghee - 1 tbsp kosher salt - 2 tsp garlic powder - 1 tbsp dried herbs (rosemary, thyme, or a blend) DIRECTIONS 1. Heat the oven to 350°F. Pat the roast dry — a dry surface browns, a wet one steams. 2. Rub with ghee, then salt, garlic, and herbs. 3. Roast on a rack until the center reads 135°F, about 20 minutes per pound. 4. Rest 15 minutes, snip the twine, and slice. That's the whole recipe.

Garlic-Stuffed Boneless Leg with White Beans

Serves: 6 Prep time: 25 minutes Cook time: about 90 minutes at 325°F INGREDIENTS - 1 boneless Finnsheep leg roast (3–4 lbs) - 6 garlic cloves, halved - 2 tbsp ghee, salt, and pepper - 2 cans white beans, drained - 1 cup lamb or chicken stock - 1 cup crushed tomatoes - A few thyme sprigs DIRECTIONS 1. Open the roast where it naturally unrolls, season the inside, scatter half the garlic, roll it back up, and tie at 1-inch intervals. 2. Brown the tied roast well in a Dutch oven in ghee, then remove. 3. Add beans, stock, tomatoes, thyme, and remaining garlic to the pot. Nestle the roast on top. 4. Cover and braise at 325°F for about 75 minutes, until the center is 135°F. Rest 15 minutes. 5. Slice and serve over the beans, which have soaked up the lamb juices — dinner and side dish from one pot.

Butterflied Leg Shawarma on the Grill

8–10 servings · 24-hour marinade, 45 minutes cooking

Serves: 8–10 Prep time: 30 minutes plus 12–24 hours marinating Cook time: 40 minutes INGREDIENTS - 1 boneless Finnsheep leg, untied and opened flat - 1 cup plain yogurt - 6 garlic cloves, grated - 2 tbsp each cumin, coriander, and smoked paprika - 1 tbsp turmeric, 1 tsp cinnamon, 1 tsp cayenne - 2 tbsp kosher salt, juice of 2 lemons DIRECTIONS 1. Mix the marinade, coat the opened leg thoroughly, and refrigerate 12–24 hours. Yogurt tenderizes and helps the spices cling. 2. Thread the meat onto two parallel skewers so it hangs flat like a restaurant shawarma cone. 3. Grill over medium indirect heat, turning every 8–10 minutes, until the edges char and the center reads 135°F. 4. Rest 15 minutes, then shave thin slices off the outside, just like carving from a vertical spit. Serve in warm flatbread with pickles and tahini sauce.
